ORDER THE CITY

Five rituals, without the costume.

Coffee before sugar

Try a small coffee and ask about its producer and processing. A farm visit is more meaningful when it includes the work behind the cup.

Pepián with a meal

When a kitchen offers this recado-based dish, eat it with rice and tortillas and ask about the meat or vegetable version. Do not expect it on every café menu.

Warm tortillas

Order enough for the meal and let tortillas accompany a stew or beans rather than treating them as a separate attraction.

Banana bread for later

Buy a modest piece from Doña Luisa for a café break or the next morning’s early departure; keep a proper lunch in the plan.

Cacao beyond a souvenir

Choose a workshop that explains beans and processing, then taste the chocolate before selecting gifts. Tell the host about allergies before the class.

RESERVATION CLOCK

Book by pressure, not prestige.

Weeks aheadSmall rooms, tasting menus, major weekends, and true occasion meals.

Several daysPrime dinner times and restaurants tied to a fixed show or attraction.

Same dayMarkets, counters, bakeries, and casual institutions after checking hours.

Always flexibleKeep one meal open for the neighborhood the trip makes you curious about.
